Instructions

No-Bake Pistaschio Date Cookies

  • Place all ingredients in food processor
  • Process until all ingredients combine and the dough starts to ball up (if it's too crumbly to hold together, try adding one or two more dates)
  • Scoop out one-inch balls of the dough and press flat into the muffin top cup or onto a parchment lined pan
  • Freeze for at leat one hour

Vanilla Cashew Butter Coating

  • Place cashew butter, cacoa butter, and coconut oil in a small saucepan
  • Cook over medium-low heat for about five mintues until the ingredients are well combined and don't separate, stir occasionally
  • Remove from heat and allow to cool 8 – 10 minutes
  • Whisk in vanilla and salt
  • Pour into small bowl that is deep enough to dip the cookies
  • Dip half of cookie into the coating so it has a thick layer
  • Place on parchment-lined pan
  • Repeat with the rest of the cookies
  • Freeze for at least 30 minutes to allow the coating to harde
  • Store in refrigerator or freezer
