These No-Bake Pistachio Date Cookies with Vanilla Cashew Butter Coating are a naturally sweet, dairy-free, and egg-free treat made with Medjool dates, pistachios, and cashews. They are gluten-free, refined sugar-free, Paleo-friendly, GAPS Diet friendly, and SCD diet-friendly, requiring no baking for a quick and healthy snack.
Place all ingredients in food processor
Process until all ingredients combine and the dough starts to ball up (if it's too crumbly to hold together, try adding one or two more dates)
Scoop out one-inch balls of the dough and press flat into the muffin top cup or onto a parchment lined pan
Freeze for at leat one hour
Place cashew butter, cacoa butter, and coconut oil in a small saucepan
Cook over medium-low heat for about five mintues until the ingredients are well combined and don't separate, stir occasionally
Remove from heat and allow to cool 8 - 10 minutes
Whisk in vanilla and salt
Pour into small bowl that is deep enough to dip the cookies
Dip half of cookie into the coating so it has a thick layer
Place on parchment-lined pan
Repeat with the rest of the cookies
Freeze for at least 30 minutes to allow the coating to harde
Store in refrigerator or freezer
