No-Bake Pistachio Date Cookies with Vanilla Cashew Butter Coating
Equipment
- 2 Muffin Top pans (Optional – you can press the rounds onto a lined baking sheet)
- Meausring cups and spoons
- 1 small bowl
Ingredients
No-Bake Pistachio Cookies
- 12 Medjool dates
- 1 cup raw cashews
- ยฝ cup raw pistachios
- ยผ cup unsweetened shredded coconut
Vanilla Cashew Butter Coating
- ยฝ cup cashew butter
- ยผ cup cacoa butter
- 2 tbsp coconut oil
- ยฝ tsp vanilla
- dash salt
Instructions
No-Bake Pistaschio Date Cookies
- Place all ingredients in food processor
- Process until all ingredients combine and the dough starts to ball up (if it's too crumbly to hold together, try adding one or two more dates)
- Scoop out one-inch balls of the dough and press flat into the muffin top cup or onto a parchment lined pan
- Freeze for at leat one hour
Vanilla Cashew Butter Coating
- Place cashew butter, cacoa butter, and coconut oil in a small saucepan
- Cook over medium-low heat for about five mintues until the ingredients are well combined and don't separate, stir occasionally
- Remove from heat and allow to cool 8 – 10 minutes
- Whisk in vanilla and salt
- Pour into small bowl that is deep enough to dip the cookies
- Dip half of cookie into the coating so it has a thick layer
- Place on parchment-lined pan
- Repeat with the rest of the cookies
- Freeze for at least 30 minutes to allow the coating to harde
- Store in refrigerator or freezer
