SCD Recipe: Caramel Apples

Now that I’m seeing Halloween decorations everywhere I go, I couldn’t resist making caramel apples. I used to make these every Halloween with my mom, when I was growing up. I remember unwrapping all those little caramel candies! Since we can’t use those of course, this caramel is made with honey, butter, and vanilla. It really couldn’t be easier to make.

How do you make SCD Honey Caramel?

Making honey caramel is very easy and only takes a couple of ingredients. You will just need some honey, butter, and vanilla.


The key to getting the right texture is patience. Heat the honey and the butter over low heat, stirring while it thickens. If you cook it too fast, it will just get hard and may have a burnt taste.

What kind of apples should you use for SCD Caramel Apples?

You can use a wide variety of apples to make caramel apples. I like Gala apples for their flavor and texture. Sometimes I will use Granny Smith if I want to offset the sweetness of the caramel with the tart flavor Granny Smith apples have. Fuji apples work great because they are a little larger and they are firm. I don’t like red or golden delicious as well because they have a softer texture and don’t hold up as well with the caramel in my opinion.

Honey Caramel Apples

Ingredients

  • 2 medium or large apples
  • ½ cup honey
  • 3 tbsp butter
  • ½ tsp pure vanilla extract
  • 1 – 2 tbsp chopped pecans (optional)
  • 1 – 2 tbsp shredded coconut (optional)

Instructions

  1. Wash apples and place on a plate

  2. Insert popsicle stick into apple where the stem is

  3. Add butter and honey to a small sauce pan

  4. Heat over medium-low heat until butter melts and mixture just starts to bubble

  5. Reduce heat to low and stir mixture for 6 – 10 minutes until it starts to thicken and darken

  6. Remove from heat

  7. Allow to cool for a minute

  8. Stir in vanilla

  9. Spoon caramel mixture over top of apples so it runs over

  10. Use a spatula to spread more caramel over uncovered parts of the apple

  11. If you are adding any extra toppings like nuts or coconut, sprinkle them on quickly before caramel hardens

  3. Love it!! I made the caramel and put it in a pan then let it cool and cracked it up. delicious caramel toffee tasting treat, very chewy so must have small pieces.

  4. I also love making this for candy. I pour it into little tiny candy molds, and put it in the freezer. Also good for a sore throat. 😉
