Who doesn’t love pizza? I know I do and ever since I started the Specific Carbohydrate Diet nearly 18 years ago, I’ve been trying out different SCD-friendly crusts trying to find the perfect one. You can find several pizza recipes here on this site – some better than others. Making crust from almond flour can be hit and miss.
I’ve probably had the best success making my own crust using cauliflower. My almond flour crusts usually come out a little soggy unless I make a very thick crust like my Focaccia crust. I’d pretty much given up on almond flour crusts when I came across Liberated Specialty Foods frozen crust at my local Sprouts. If you can’t find them at your local store – they’re also available on Amazon.
I could hardly believe it when I saw SCD Legal right on the box. That’s certainly not something I ever thought I’d see!
After confirming the ingredients listed on the back of the box were indeed find for the SCD, I had to try it!
Each box contains three small crusts that you prepare the same way you would any frozen pizza crust. For the first one I went for my favorite pizza toppings – tomato sauce, sauteed peppers, onions, pineapple, and bacon with Provolone and Parmesan cheese.
As you can see I like to load it up. This made the crust crack a little when I put it on my plate, but otherwise the crust held together quite well. It wasn’t soggy at all! The flavor of the crusts is very nice. Of course almond flour doesn’t taste, or have the same texture, as wheat flour, but the seasonings gave it a robust Italian flavor.
For the next crust I decided to try a breakfast pizza and it was awesome! Just some scrambled eggs, bacon, cheese, onions, and peppers topped with a little guacamole. I loved it!
For the last one, I decided to go for some cheesy bread as a snack. It was exactly what I was looking for in something light that could go with zoodles and sauce or just be a movie-night snack.
