Just because we can’t have oats on the Specific Carbohydrate Diet (SCD)™ doesn’t mean we can’t have a totally satisfying granola. This recipe is so tasty you’ll have a hard time keeping it around!
What’s in SCD™ granola?
It’s uses a mix of raw nuts and raisins:
- Walnuts
- Pecans
- Cashews
- Coconut Chips (unsweetened of course)
- Raisins
Along with a sweet mix of “wet ingredients” to hold it all together:
- Crushed pineapple
- Cacoa butter
- Coconut Oil
- Medjool Dates (not wet, but they are processed with these ingredients)
- Ground Cinammon (also added with the vet ingredients)
- Pure Vanilla Extract
What is the texture of SCD™ granola?
This SCD™ granola is crunchy and the coconut flakes at that oat-like texture. I like my granola to have large chunks, but you could also chop, or process, your nuts to be finer.
I chopped my nuts to be different sizes. My walnuts were bigger chunks, while my cashews and pecans were a little smaller to create more texture.
What is this SCD™ granola sweetened with?
This granola is sweetened purely with dates and crushed pineapple. You can also use honey to sweeten homemade granola.

I love it! It’s so good. The cacoa butter gives it a nice, smooth texture and adds just a hint of chocolate flavor. The crushed pineapple adds a fruity freshness and blends nicely with the dates to add just the right amount of sweetness.
My husband told me I should come up with a way to sell it. It’s great for snacks, as a topping for yogurt and ice cream and you can use it for a crunchy cereal.

Grain-free Nutty Granola
Ingredients
- 1 cup pecans (roughly chopped)
- 1 cup cashews (roughly chopped)
- 1 cup walnuts (roughly chopped)
- 1 cup unsweetened coconut chips (the big flakes)
- ¾ cup raisins
- 2 tbsp melted cacoa butter
- ¼ cup melted coconut oil
- 1 8 oz. can crushed pineapple in its own juice make sure no added ingredients
- 5 Mediool dates (chopped)
- ½ tsp sea salt
- 1 tsp ground cinnamon
- 1 tsp pure vanilla extract
Instructions

Heat oven to 300F°

Add nuts, coconut, and raisins to large mixing bowl

Stir to mix

Melt coconut oil and cacoa butter in small saucepan over low heat until it just melts

As soon as it's melted, immediately remove from heat and set aside

Add crushed pineapple, chopped Medjool dates, vanilla, salt, and cinnamon to food processor

Pour in melted cococnut oil and cacoa butter

Process until smooth (there may still be little chunks of the dates, but rest of mixture should be smooth)

Pour over nut mixture and stir until everything is coated

Line baking sheet with parchment paper

Evenly spread mixture over parhcment paper

Bake 50 – 60 minutes until mixture is golden brown and firm (granola will still be a little soft, but will crisp as it cools, be sure not to overcook)

Place baking sheet on wire rack and allow to cool for an hour

Store on counter in air tight container

Place in refrigerator if it starts to get soft
