I haven’t been home much the past week, so I haven’t done much cooking. In fact I haven’t done a complete grocery shopping trip since the weekend before Christmas. Nonetheless, I got through the entire holiday season with only a couple non-SCD “indulgences:” Potatoes, Zevia soda, chocolate sweetened with honey. Not bad really.
My favorite discovery of this past week is that Ruby Tuesday offers plain roasted spaghetti squash as a side dish! This was a first for me at a restaurant, and I was glad to have it. You just have to make sure you order it with plain butter instead of their butter sauce. I ordered their petite sirloin dinner (minus the seasonings) with a side of grilled green beans, and side of spaghetti squash. The only unfortunate thing is that I was out of town and there is no Ruby Tuesday anywhere near where I live.
For Christmas Eve I ate:
Baked Salmon, roasted butternut squash, fruit and green salad.
For Christmas dinner I had:
Tenderloin roast, cooked carrots, fruit, baked potato
For New Years Eve:
Eggplant lasagna (oh – one other non-SCD ingredient mozzarella: a natural deli makes this wheat free lasagna that works for me, but is not quite SCD), roasted chicken.
