1 cauliflower
1 egg
3/4 cup broth – water will work too, but you might need some extra seasoning
1/2 cup shredded cheese
2 Tbsp butter
salt and pepper to taste
Preheat oven to 350 degrees.
Wash and chop cauliflower into pieces. Boil for about 10 minutes until cauliflower is soft but not mushy. Drain. Put cauliflower into blender or food processor and add the broth slowly as you blend the caulilflower – I used chop setting at first. It can be a little tricky to get it to blend evenly, I just kept stopping it pushing it down with a spatula, adding a little broth, until it was all blended. When cauliflower is desired consistency add egg and butter. Blend until egg is mixed in.
Lightly oil or butter a baking dish. Add cauliflower to dish. Stir in most of the cheese and salt and pepper. Sprinkle the remaining cheese over the top. Bake for 30 minutes.
