SCD Recipe: Lemon Curd

Lemon curd is easy to make for the Specific Carbohydrate Diet. It can be used in many different dessert recipes and is delicious on its own. It’s also great stirred in with yogurt. You’re going to love it!

A lot of lemon curd recipes call for just using egg yolks. I’ve always just used the entire egg, but you can definitely just use yolks if you plan to use the whites for something else like meringue. ┬áJust increase to four yolks instead of three eggs.
