SCD Recipe: Lemon Curd – Honey Sweetened

Lemon curd is easy to make for the Specific Carbohydrate Diet™. It can be used in many different dessert recipes and is delicious on its own. It’s also great stirred in with yogurt. You’re going to love it!

A lot of lemon curd recipes call for just using egg yolks. I’ve always just used the entire egg, but you can definitely just use yolks if you plan to use the whites for something else like meringue.  Just increase to four yolks instead of three eggs.

Do you need fresh lemons to make lemon curd?

You don’t have to use fresh lemons in lemon curd, but I definitely recommend it. Fresh lemons have such a great lemony flavor. Fresh lemons are also best for SCD™ and a lot cheaper than buying bottled lemon juice that is not from concentrate.

You can also grate in some lemon zest if you like. I don’t particularly like the texture of lemon zest, but a lot of people like the extra flavor it provides.

What do you need to make SCD™ Lemon Curd?

Lemon Curd Ingredients:

  • Lemons (or lemon juice)
  • Honey
  • Butter
  • Eggs

Lemon Curd Equipment:

  • Medium saucepan
  • Cooking spoon
  • Stand mixer or electric mixer
  • Butter knife

Ingredients

  • 3 large eggs (increase to 4 if only using yolks)
  • ½ cup lemon juice
  • cup honey
  • 6 tbsp butter (or coconut oil for Paleo)

Instructions

  • Beat eggs, lemon juice, and honey at high speed for 1 – 2 minutes
    3 large eggs, 1/2 cup lemon juice, 1/3 cup honey
  • Chop butter into six pieces – 1 piece for each tablespoon
    6 tbsp butter (or coconut oil for Paleo)
  • Place egg mixture into a medium saucepan
  • Heat over medium-low heat, stirring constantly, for 8 – 10 minutes until mixture thickens and coats the back of the spoon
  • Remove from heat
  • Stir in butter pieces one at a time until butter is completely melted and mixture is combined
    6 tbsp butter (or coconut oil for Paleo)
  • Pour mixture into a large bowl, or several small bowls to make individual servings
  • Allow to cool to room temperature
  • Place in refrigerator and chill for at least an hour before serving
  • Store in refrigerator
