If you miss brownies, these SCD (Specific Carbohydrate Diet) blondies may be the ticket. I don’t cook with cocoa butter a lot because it a little expensive, but every once in a while it’s fun to treat yourself.
Cocoa butter doesn’t taste exactly like regular chocolate, but for SCD it’s about as close as we can get. The cocoa butter makes these nice and moist with a subtle white-chocolate type flavor.
SCD Cocoa Butter Blondies
Ingredients
- 1/2 cup raw cocoa butter for melting
- 1/4 cup butter
- 1/2 cup cashew butter
- 1/2 cup honey
- 1 tsp vanilla
- 2 large eggs
- 1/4 cup almond flour
- 1 tbsp coconut flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/4 cup raw cocoa butter to stir in
- 1/4 cup chopped walnuts (optional)
Instructions

Heat oven to 350 degrees

Melt the 1/2 cup cocoa butter pieces and 1/4 cup butter in a small sauce pan over low heat

Remove from heat and stir in honey

Add cashew butter, cocoa butter mixture, eggs, and vanilla to a large mixing bowl

Beat at medium speed until smooth

Add almond flour, coconut flour, baking soda, and salt

Beat at medium speed for a minute, until ingredients are mixed

Coursely chop cocoa butter pieces so they are not in big chunks

Stir in cocoa butter pieces and chopped walnuts

Lighly grease an 8 x 8 square or a 9" round cake pan with coconut oil

Pour batter into prepared cake pan

Bake for 20 - 25 minutes until blondies are set on top and toothpick inserted in the middle comes out clean

Cool completely on wire rack for about an hour before slicing

Store in refrigerator
