This is a great summer dessert. You don’t have to grill it, but it gives it that extra something if you do!
Ingredients:
2 cups almond flour
1/2 tsp baking soda
1/4 tsp salt
2 tbsp melted butter
1/4 cup honey
1 tbsp pure vanilla extract
3 eggs
1 cup frozen cherries that have been thawed
additional butter for grilling
Fresh berries (optional)
Plain yogurt (optional)
Preparation:
- Preheat oven to 350 degrees
- Line the bottom of a 9″ loaf pan with parchment paper and lightly oil the sides
- Combine almond flour, baking soda and salt in a large bowl
- In another bowl add the butter, honey, vanilla, and eggs
- Mix until smooth
- Pour wet mixture into almond flour mixture
- Stir until well combined
- Place cherries into a blender or bowl (if using a hand blender)
- Take a half cup of the batter and pour it over the cherries
- Blend until smooth
- Pour plain batter into the loaf pan
- Pour the cherry mixture on top
- Bake for an hour to an hour and fifteen minutes until cake is firm (cake will be very moist on top, but should appear cooked. Don’t worry if the the top part darkens a little, just don’t let it burn)
- Cool cake completely before removing from pan
- Store cake in refrigerator
- Heat grill pan on medium-low heat
- Butter both sides of the cake – fairly generously – you don’t want the cake to stick to the pan
- Grill for 2 to 3 minutes per side
- If desired garnish with fresh berries and yogurt
