I was just thinking about all the things I eat on a regular basis that I never had before the Specific Carbohydrate Diet. There are so many foods I either never thought of eating or I thought I didn’t like. I added them to my diet since they were legal foods and I was searching for replacements for the things I had to leave out.
- Dates – I don’t remember what prompted me to buy dates. I think I just needed a snack and I couldn’t find anything else. I had never eaten one, or even used them for baking. Now I eat them all the time. I like them best with Brazil nuts.
- Squash – Squash was one of those things I hated as a kid. I would never eat it when my mom made it. Spaghetti squash was completely new to me. Now I eat spaghetti squash all the time. I also have butternut, hubbard, and delicatta regularly.
- Kale – I never thought of eating Kale, it just didn’t appeal to me. I actually only started eating it recently. I like it sauteed with onions or as chips.
- Plain yogurt with mashed banana and peanut butter stirred in. I always just bought flavored yogurt. I liked fruit at the bottom yogurt, and I usually tried to go with low sugar, but I rarely bought plain yogurt. I wouldn’t have thought of stirring peanut butter in, but it sounded kind of good when I was sitting there with a bowl of plain yogurt and trying to figure out how to flavor it.
- Speaking of peanut butter… I would have never thought to buy the freshly ground peanut butter if I hadn’t been looking for something with no sugar in it. I think the SCD friendly peanut butter tastes a lot better than the regular kinds.
- Almond flour – This was a completely new concept. Although I miss regular flour bread, I think the almond flour is a perfectly good substitute for cakes and cookies.
- Oil and Vinegar – I have to admit I wasn’t crazy about non-creamy salad dressings before SCD. I never drenched my salad in dressing but I did like a little ranch or blue cheese. Now I’m good with plain old oil and vinegar.
I’m sure there are plenty of other foods, but these are the one’s that stand out. One of the best things about SCD is that I eat a lot more vegetables than ever before!
