This one is pretty easy.
For two sandwiches:
2 Parmesan Rolls
1 Can SCD Safe Tuna (no broth, no soy)
4 Slices of your favorite cheese
Salt and Pepper to Taste
Butter for rolls
Here comes a choice:
1 Tbsp SCD mayo
or
1 or 2 tsp Olive Oil
1/2 to 1 tsp vinegar
I don’t really like mayonnaise, so I just use a little oil and vinegar mix to wet down the tuna a little. I don’t really measure it, I just drizzle a little olive oil until it seems like the right amount and then add a splash of vinegar.
Slice rolls in half and toast in a toaster oven – just use your favorite toast setting. Butter when done.
Preheat toaster oven to 350 degrees when the rolls are done toasting.
Mix all the other ingredients, besides cheese, in a bowl.
Line a baking sheet with parchment paper. Lay the rolls on the baking sheet. Top with the tuna and cheese.
Bake for 5 – 10 minutes until the cheese is melted.
