My husband really liked this recipe. He said it tasted like something he would order in a restaurant.
2 boneless skinless chicken breast cut into one inch pieces
2 Tbsp almond flour
1/3 cup plain yogurt
2 Tbsp grated sharp cheddar cheese
2 tsp powdered ginger (or 1 Tbsp grated fresh ginger)
1/2 tsp turmeric
1 tsp salt
1/2 tsp freshly ground black pepper
1 tsp lemon juice
Mix all the ingredients except chicken in a large bowl. Add chicken cubes and stir to coat chicken. Cover bowl and refrigerate. Let marinate for 5 – 6 hours or overnight. Soak wooden skewers in water for 10 – 15 minutes before use.
Preheat oven to 400 degrees.
Put chicken pieces on skewers and place in a baking pan. Bake for ten minutes. Turn skewers and bake another ten to fifteen minutes until chicken is done.
