I used my Pumpkin Cake recipe. I used peanut flour again, but a little less – 2 cups peanut flour became 3 cups when I sifted it. It came out even better that way. I really recommend this flour if you can tolerate it and if you can find SCD legal flour (peanuts only). The texture of the cupcakes were pretty much the same as regular flour.
I will post the recipes for the Jelly Cupcakes and the Peanut Butter Cups later this week. The peanut butter cups were really good.
