Now that I’m seeing Halloween decorations everywhere I go, I couldn’t resist making caramel apples. I used to make these every Halloween with my mom, when I was growing up. I remember unwrapping all those little caramel candies! Since we can’t use those of course, this caramel is made with honey, butter, and vanilla. It really couldn’t be easier to make.
Ingredients:
2 medium to large apples
1/2 cup honey
3 tbsp butter
1/2 tsp vanilla
Preparation:
- Add honey and butter to a medium saucepan
- Stir over medium heat until it starts to butter
- Allow to bubble for several minutes (4 – 6) stirring just enough to keep it from burning
- Sauce will darken as it cooks
- When sauce is a nice golden brown and sticks to the back of the spoon remove from heat
- Stir in vanilla
- Place apples on a plate and insert Popsicle sticks in the middle of washed apples
- Carefully pour sauce over apples so it is coated on all sides
- Coating will harden very quickly

Love it!! I made the caramel and put it in a pan then let it cool and cracked it up. delicious caramel toffee tasting treat, very chewy so must have small pieces.
I also love making this for candy. I pour it into little tiny candy molds, and put it in the freezer. Also good for a sore throat. 😉
