For these stuffed peppers I was going for a kind of “Impossible Cheeseburger Pie” (if you ever had that, it was a staple of ours when I was growing up) taste and texture – in a pepper.
These would be good with some homemade ketchup, but I forgot about making that ahead of time!
Ingredients:
4 bell peppers (red, green, yellow, orange – your choice)
Meat Filling:
1 tbsp olive oil
4 slices chopped bacon
1 lb ground turkey or beef
1 cup chopped onion
1 clove minced garlic
1 tsp salt
1 tsp pepper
1/4 tsp turmeric
1 cup fresh baby spinach
Dough Filling:
1 1/4 cups almond flour
1/4 tsp salt
1/4 tsp baking soda
2 tbsp melted butter
1 egg
The Rest of the Filling:
1 cup fresh grated Parmesan cheese
4 slices sharp cheddar cheese
Preparation:
- Preheat oven to 350 degrees
- Heat large pan over medium heat
- Cook bacon until just crispy
- Remove bacon to paper towel covered plate
- Drain bacon grease (or you can use it in place of the olive oil if you like that)
- Add olive oil
- Saute onion and garlic in olive oil until the onions are translucent
- Add the ground turkey or beef
- Brown meat until cooked through
- Turn off heat
- Add spinach and stir until spinach is cooked
- Stir in cooked bacon
- Remove pan from heat
- Combine all dough ingredients in a medium bowl
- Stir until mixed thoroughly
- Stir dough into meat mixture
- Make sure this is well combined or you will get pockets of dough in the pepper
- Stir in Parmesan
- Wash peppers, cut tops off peppers and remove seeds and white ribs
- Place peppers in a baking dish
- Scoop filling into the peppers so they are stuffed full
- Bake peppers for 30 minutes
- Place cheddar cheese slices over each pepper and bake for another 15 minutes
