Are date balls easy to make?
Date balls are very easy to make, and they are versatile in the number of combinations and flavors you can do. They are great for the Specific Carbohydrate Diet (SCD) because you can easily make them gluten, grain, and sugar-free. These date balls are made with peanut butter, but you can use another kind of nut butter if you don’t want to use peanuts.
Are date balls cooked?
These date balls are raw. You simply process the ingredients in a food processor and form into balls. I like to roll them in shredded coconut because they can get a little sticky, especially when they warm up.
What’s the best way to store date balls?
I like to store them in the refrigerator and keep them chilled. If you like them soft, you can leave them on the counter for a little bit to warm them up. I find if I leave them out all the time, the oil from the nuts comes to the surface and they get a little messy. I also found that they got a little too hard in the freezer, but if you are traveling, freezing would be a good way to keep them chilled longer.
What do you need to make date balls?
- Dates (I like Medjool best, but you can use other times or a combination
- Peanut butter (no sugar or other non-SCD additives)
- Dried cherries – unsweetened
- Raw cashews
- Shredded coconut – unsweetened
- Food processor
- Baking sheet
Ingredients
- 1 cup roughly chopped Medjool dates
- 1 cup chopped cashews
- ½ cup peanut butter
- ½ cup unsweetened dried cherrries
- 3 tbsp unsweetened shredded coconut
Instructions
- Add chopped dates, cashews, peanut butter, and cherries to food processor1 cup roughly chopped Medjool dates, ½ cup peanut butter, ½ cup unsweetened dried cherrries, 1 cup chopped cashews
- Process for 4 – 5 minutes until ingredients combine and form into a ball
- Form mixture into one inch balls and roll in shredded coconut3 tbsp unsweetened shredded coconut
- Place on baking sheet and freeze for 10 – 15 minutes
- Store in air-tight container in refrigerator
