If you’re feeling ready for a more indulgent Specific Carbohydrate Diet dessert this recipe is perfect! I used to love peanut butter bars when I was a kid and I’ve been dying to try to make some. I was a little unsure because you can’t get the same texture without regular sugar, and of course no chocolate, but these turned out really good!
They’re a little rich so I wouldn’t go crazy with them, but they are a good cure for a sweet craving. You may even want to cut them into smaller bars to keep things a little lighter.
SCD No Bake Peanut Butter Bars
Ingredients
Peanut Butter Layer
- 1 1/2 cups SCD peanut butter (no sugar)
- 1/4 cup honey
- 1/4 cup coconut oil (melted)
- 1/4 cup coconut flour
- 1/4 tsp sea salt
Topping
- 1/2 cup coconut butter
- 2 tbsp honey
- 1 tbsp butter
- 1/2 tsp pure vanilla extract
- 1 - 2 tbsp shredded unsweetened coconut
Instructions

Add all ingredients to for the peanut butter layer to a large bowl

Stir until everything is thoroughly combined

Line bottom of 8 x 8" dish with parchment paper

Lightly oil the sides with coconut oil

Spread peanut butter mixture in an even layer in the pan

Place in refrigerator while you prepare the topping
Topping
-
Add coconut butter, honey, and butter to a small saucepan

Heat over medium-low heat until melted, stirring often

Remove from heat and stir in vanilla

Spread evenly over peanut butter layer

Sprinkle shreadded coconut over the top

Refrigerate for at least two hours before cutting into bars

Store in refrigerator to keep them firm
