Following the Specific Carbohydrate Diet sometimes means getting creative with the food you have available. I pretty much always have bananas and yogurt. While just bananas and yogurt is fine for breakfast, snack, or when you’re really hungry and there isn’t anything else handy, it’s fun to try to amp things up a bit.
Making bananas into pancakes, whipping up some yogurt with honey, and slicing some strawberries makes a kind of strawberry shortcake-like desssert. I’ve made other strawberry shortcake recipes, but they are more advanced and time consuming. I made this in about 15 minutes. The limited ingredients also makes it good for those who are newer to the diet.
Strawberry Bananacake Stack
Ingredients
- 2 small ripe bananas
- 1 large egg
- 1/2 tsp honey
- 1/2 tsp lemon juice
- 1/4 tsp baking soda
- 6 medium strawberries
- 1/2 cup SCD yogurt
- 1/2 tsp honey or to taste
- 1/4 tsp vanilla optional
- 1 tbsp butter or cononut oil for frying
Instructions

Blend bananas, egg, honey, lemon juice, baking soda until smooth

Heat butter (or coconut oil) in a frying pan over medium-low heat

When butter is melted pour batter into pan to make three small pancakes

Cook for 2- 3 minutes until you start to see bubbles form on top and the edges thicken - be careful these burn easily, which is wny the heat is lower than usual for pancakes

Flip pancake and cook for 2 - 3 minutes until pancake is cooked through

Remove pancakes to plate

Melt the rest ofthe butter in the pan and repeat steps

Whisk yogurt with honey and vanilla until smooth

Slice strawberries

Stack cakes, strawberries, and yogurt
