SCD Pancakes are usually a little time consuming to make before work, but these banana pancakes can be whipped up in minutes and only require a few ingredients. This is a single serving recipe (maybe two servings depending on how many little pancakes you want) that I make sometimes when I don’t my one of my usual weekday breakfasts – yogurt, smoothie, or a LARA bar with a banana.
I’ve added some Paleo alternatives – basically just substituting the peanut butter for a different kind. I’ve made them both ways and they’re just as good with almond or cashew butter.
SCD Recipe: Quick and Easy Banana Pancakes
Ingredients
- 1 large ripe banana
- 1 tbsp peanut butter or other nut butter for Paleo
- 1 large egg
- 1 1/2 tsp coconut flour
- 1 tsp honey
- 1/4 tsp pure vanilla extract
- 1 tbsp butter or coconut oil for frying
Instructions

Add all ingredients to a mixing bowl

Whisk until smooth – you can use an electric mixer if you want. My goal was to minimize cleanup

Melt half the butter (or coconut oil) in a frying pan or griddle over medium heat

Spoon silver dollar size pancakes into your pan. I usually do three at a time

Cook about three minutes – until top bubbles and edges look slightly done

Gently flip pancakes over. They should be golden brown on the bottom

Cook about two – three minutes until the other side is golden brown. You can tell when pancakes are done if you press gently on the top with a spatula and it springs back

Remove from pan and repeat with the rest of the batter

Top with whatever topping you like – honey, peanut butter, butter, fruit, etc
