SCD Recipe: Apple Dumplings

I made this recipe as a snack and quick breakfast option for the 21 Day Sugar Detox. I love these as a kind of dessert-like treat – though there is no added sweetener of any kind. Granny Smith apples are one of the only fruits allowed on the detox and when you’re used to not having sugar they actually do add a little sweetness to the diet.

Without any honey, the crust is very much like a regular pie crust. It’s a little cumbly, but very good. I will try to do some further experimenting with it in the future.

SCD Apple Dumplings

This recipe is SCD, Paleo, and 21 Day Sugar Detox friendly.

Ingredients

Filling

  • 2 large granny smith apples Peeled and chopped
  • 1 tsp lemon juice
  • 1 tsp cinnamon
  • 1/8 tsp ground ginger
  • 1/8 tsp cloves
  • 2 tbsp water
  • 1 tbsp ghee
  • 1 tbsp coconut oil

Filling

  1. Peel and chop apples and place in a sauce pan
  2. Stir in lemon juice to coat the apples
  3. Heat the pan to medium heat and add the rest of the ingredients
  4. Cook - stirring occasionally - until the apples are sauce and the liquid has thickened - about 10 minutes
  5. Remove from heat

Crust

  1. Combine all crust ingredients except coconut oil in a large bowl
  2. Mix at medium speed for a minute or two until combined - It will form a crumbly dough that you can easily form into a ball - like a traditional pie crust
  3. Cut in coconut oil - you can use the dough hook of a stand mixer or a pastry cutter

Forming the Dumplings

  1. Preheat oven to 350 degrees
  2. Line muffin pan with baking cups - 8 cups
  3. Add about a tbsp of dough to each muffin cup and press into the bottom. Use you thumb to make an indentation
  4. Spoon a tablespoon or so of apple filling into the muffin cups - evenly divide the filling over the bottom layer of dough
  5. Cover the dumplings with the remaining crust dough - place on top and flatten out a bit
  6. Bake for 18 - 20 minutes until crust is golden
  7. Store in refrigerator - these are good warmed up

Recipe Notes

If you are not following the 21 Day Sugar Detox you can add a tablespoon of honey while cooking the apples, if desired.
