What do you do when you realize you have unused strained yogurt in the fridge and a ton of frozen fruit in the freezer?
Make up a new recipe!
This works nicely for breakfast, dessert, or a snack.

Baked Fruit and Yogurt
Ingredients
- 1 cup cherries thaw - if frozen
- 2 cups peaches thaw - if frozen - sliced or chopped
- 1/2 cup walnuts chopped
- 1 cup almond flour
- 1 tsp cinnamon
- 1 cup strained yogurt should be very thick (strained at least 24 hours)
- 1 tbsp lemon juice
- 1/3 cup honey
- 1 tsp pure vanilla extract
Instructions

Preheat oven to 350 degrees

Combine peaches, cherries, walnuts, almond flour, and cinnamon in a large bowl

Add yogurt, honey, lemon juice, and vanilla to a separate bowl

Whisk until well mixed

Fold yogurt mixture into fruit and combine

Spoon into pie pan

Bake for 30 to 40 minutes until the top is lightly browned

Cool. You can serve a little warm or chilled in the refrigerator
