I never see recipes using nectarines. I really like them, so I thought I would try cooking one. I thought it worked fine. It did not have as strong of a flavor as the peach, so maybe that is why they are not used for baked desserts.
2 large peaches and/or nectarines
1 tbsp butter
1/2 cup yogurt that has been strained for a few hours so it is very thick (start with 3/4 cup yogurt or so)
1 tsp honey
1/4 tsp vanilla
Dash – cinnamon
blueberries and cherries for ganish (optional)
I used a grill pan on the stove for this, but you could use a regular grill as well, you just would have to put the butter directly on the fruit instead of melting it in the pan.
Slice peaches and nectarines in half. Remove the pit and the hard rind that is left on the flesh of the fruit.
Melt butter over medium heat in grill pan.
When butter is melted, add fruit flesh side down.
Grill for 2 – 2 1/2 minutes, until fruit has prominent grill marks and is a little soft.
Turn fruit over and grill for 1 – 1 1/2 minutes until fruit is just a little soft – don’t let it get mushy.
Remove fruit from pan and sprinkle with cinnamon.
In a small bowl, mix yogurt, honey, and vanilla.
When ready to serve, spoon yogurt filling into the center of the fruit.
Garnish with cherries and blueberries if desired.
