No nut flour needed!
1 cup cashew butter (make sure it is SCD safe – no sugar!)
1 egg
1 very ripe medium banana
1/4 cup honey
1/2 tsp vanilla
1/2 tsp baking soda
1/8 tsp salt
1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1/8 tsp ginger
Preheat oven to 350 degrees.
Line a mini-muffin pan with mini-baking cups (or two pans if you have them!).
Combine all ingredients in a large bowl.
Blend at low speed until all ingredients are blended together and bananas are incorporated throughout.
Drop by teaspoons into muffin liners – should be just over half full.
Bake for 12 – 15 minutes, until bites feel firm on top.
Remove from pan and allow to cool. I made 30 bites – baking in batches since I only have one mini-muffin pan.
If you don’t have a mini-muffin pan – you can use a regular muffin pan or an 8 x 8 baking dish. Increase baking time to 20 – 30 minutes.
