I made up this recipe as I went, hopefully I can remember exactly what I did.
3 1/4 cups orange juice
1/2 cup cold water
1/4 cup + 2 Tbsp honey
2 envelopes unflavored gelatin
1 cup dripped yogurt
1 tsp vanilla
1/2 cup sliced strawberries
In a saucepan sprinkle gelatin over the half cup of cold water. Let stand for about three minutes to soften the gelatin. Stir in 1/4 cup of the orange juice. Stir over low heat for two or three minutes until gelatin is dissolved. Stir in honey and the rest of the orange juice.
Increase heat to medium and heat to boiling. Remove from heat.
Pour the orange mixture into two separate bowls.Place in refrigerator to cool. In the meantime whip the yogurt with two tablespoons of honey and the vanilla. When the orange gelatin is slightly thickened (after about 45 minutes or so) mix one half with the yogurt and mix until fluffy. Place back in the refrigerator and allow to cool for about 30 more minutes. Pour the other bowl (non-yogurt) into the yogurt mixture and allow to swirl together. Add strawberries.
Cool until firm. Store in refrigerator.
