I have been experimenting with pizza lately, so stay on the lookout for more pizza recipes this week.
Toppings:
Pineapple – cut up into small pieces or a can (no sugar) of the tidbits
4 pieces uncured no nitrate turkey bacon
1 cup Parmesan or Romano cheese – grated
1/2 cup tomato sauce
1/4 tsp dried basil
1/4 tsp oregano
Crust:
1/2 cup almond flour
1 egg
1/4 tsp salt
1/2 tsp dried basil
1/4 tsp oregano
1/4 tsp pepper
1 tsp olive oil
Preheat oven to 350 degrees
Mix all the ingredients for the crust in a small bowl. Line baking sheet with parchment paper. Spoon dough onto center of parchment paper. Place another piece of parchment paper on top of the dough and press down to spread out dough to desired size. It should be pretty thin. I think I made about a 10 inch crust or so.
Carefully remove top piece of parchment paper. Place crust in oven and bake for 5-7 minutes. Crust should be solid and just a little browned.
Meanwhile, cook bacon until crispy. Break into small pieces.
Remove crust from oven. Spread tomato sauce over crust. Sprinkle with spices. Add the rest of the toppings.
Place back in oven and back for about 15 minutes until cheese is melted.
