Topping:
1 medium apple – I think I used cameo, but any apple used for baking should work
1/2 cup orange juice
1/2 cup water
2-3 Tbsp honey
1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp ginger
Small handful of blueberries
1 Tbsp butter
Crust:
1/2 cup almond flour
1 egg
1 tsp honey
1/4 tsp cinnamon
Preheat oven to 350 degrees.
In a small saucepan combine orange juice, water, spices and 1 Tbsp of the honey. Peel and core apple, cut into thin pieces. Drop the apple into the saucepan and let simmer over medium low heat for about ten minutes, until the apple is soft but not falling apart.
In a small mixing bowl combine all ingredients for crust. Line a baking sheet with parchment paper. Spoon dough into the middle of the baking sheet and cover with another piece of parchment paper. Press down on the dough and spread it out to a six or seven inch circle. The dough was too sticky to peel off the top parchment paper so I just left it on the bake the crust. Bake for 7 minutes, until dough is solid and just slightly browned. Remove the dough from the oven, take off top parchment paper, and let cool for a few minutes, so you can work with it.
Spread the remaining honey over the crust. Dot with butter. Place apple slices in a circle around the crust, repeat until crust is full. Place blueberries on top of the apples. Sprinkle with cinnamon.
Bake for 15 minutes.

Back in the day…I used to love the fruit pizzas at Cici’s pizza and have been wondering about a SCD version. This looks great.
