I made this dough the other day somewhat by accident. I set out to modify Wholesome Yum’s Keto Bagel recipe to be okay for the Specific Carbohydrate Diet (SCD). Everyting went well, but I realized after I had popped the test batch of my breadsticks in the oven, that the eggs were still sitting on the counter.
Without any way to add them and only having a little over half of my dough left, I decided to wait and see how the breadsticks came out.
While I was making the dough, I also kept thinking how much like pie crust it seemed like (obviously it was because the eggs were missing, but I didn’t realize it at the time). Since the recipe wasn’t the way I had intended I decided to roll it out and make some mini-pies with the couple of apples I had in the fridge.
The dough is savory and would be great with a meat pie, but I didn’t have everything for that. Apples and cheese go together so I decided to give that a try.
Both the breadsticks and the pies came out great! I wouldn’t use the dough to make a crust for a sweet pie like berry, peach, or custard, but it worked fine with apples and you could try other savory dishes.
The breadsticks were good on their own – and would be a good accompaniment for a dish that had tomato sauce – like zoodles. I had a couple left over so I made a sandwich with them – it was awesome!
SCD Savory Pastry Dough
This dough is versatile and can be used to make breadsticks, biscuits, and pie crust
- 1 1/2 cups almond flour
- 3/4 tsp baking soda 1/2 + 1/4 tsp
- 1 tsp lemon juice
- 1/4 tsp salt
- 1/4 cup strained SCD yogurt make sure it's very thick
- 2 1/2 cups shredded Gouda you can subsitute another SCD-legal cheese
Add almond flour, baking soda, lemon juice and salt to a medium mixing bowl
Stir together so everything is combined
Whisk yogurt until it is smooth
Add yogurt and cheese to a medium sauce pan
Heat over low heat until the cheese and yogurt are melted and you can combine them - you can also use a double broiler to do this, but I didn't hve any trouble using a sauce pan. Make sure you don't let the cheese start to brown in the bottom of the pan, it just needs to be soft and melted
Once the cheese and yogurt are melted together, add it to your dry mix
Use your hands to combine the dough so that it resembles pie dough
For Breadsticks or biscuits
Preheat oven to 400F
Line a baking sheet with parchment paper
Break off pieces of the dough and roll them into either a breadstick shape or biscuit shape
Bake for 12 - 15 minutes until the bottom of the breadsticks are golden brown and they don't feel doughy when you press on them
Cool on wire rack for about 15 minutes
For Pie Dough
Roll the dough out between two sheets of parchemnt paper until it is thin
The dough won't really hold together to place into a large pie pan, but I was able to press it into ramekins to make a bottom and top crust.
Bake according to regular pie instructions. I made mini apple pies by cooking diced appes with honey and cinnamon until they were a little soft. I then baked them in the crust at 400F for 30 - 25 minutes
