I don’t eat a lot of pork, but we happened to have some pork tenderloin. I like it best slow cooked so it is nice and tender. I have done it on the stove top, but you can’t really beat doing it in the slow cooker.
Ingredients:
One or two pork tenderloins
2 – 3 tbsp olive oil
1 – 2 tbsp dried spices (basil, cilantro, sage, parley, garlic – whatever you like)
1 tsp salt
1/2 tsp pepper
1 cup water
Romaine or Butter lettuce leaves
Preparation:
- Mix all spices, salt and pepper in a small bowl
- Place tenderloin(s) on plate
- Rub olive oil over the tenderloin
- Spread spices evenly over the tenderloin
- Pour one cup of water into the slow cooker
- Place meat in slow cooker
- Cook on high for two hours, then reduce to low and cook another 2 – 4 hours
- Allow meat to rest a few minutes before serving
- Break meat apart and place in lettuce leaves
- Wrap and eat
