2 cod fillets
3/4 almond flour
1/2 cup grated Parmesan
1 tsp salt
1 tsp freshly ground pepper
2 eggs
Olive oil
Preheat oven to 500 degrees.
Line baking sheet with parchment paper. Spray with olive oil.
Slice cod into half inch strips. Beat eggs in a small. bowl. Combine flour, cheese, salt and pepper in a small bowl.
Dip fish into egg and then dredge in the flour mixture.
Place fish evenly in single layer on baking sheet.
Spray fish with a little olive oil.
Bake for 13 to 15 minutes, until fish is golden brown.

These fish sticks are awesome! Even my husband liked them and he was a bit worried they would be soggy but they weren’t.
