2 – 4 medium sized salmon fillets
1 tbsp olive oil
1/2 cup almond flour
2 tbsp grated Parmesan
2 tbsp melted butter
1 tbsp freshly chopped dill
1/2 tsp salt
1/2 tsp fresh ground pepper + to taste for searing fish
Preheat oven to 400 degrees.
Combine almond flour, Parmesan, butter, dill, salt and pepper in a small bowl.
Wash salmon and pat dry. Salt and pepper both sides of the salmon. Add olive oil to frying pan. Sear salmon in a pan over medium-high heat for 2 – 3 minutes. Turn off heat. Flip salmon over and spread dill mixture over the fillets.
Bake for 8 – 10 minutes until salmon is cooked through, and crust is browned. If you are using an oven safe frying pan you can just put the pan in the oven, otherwise transfer fish to a baking dish.
