I don’t know if this is true goulash, but that’s what I’m calling it.
1 lb ground turkey
1/2 cup diced onion
1/2 cup chopped peppers (red, green, yellow, orange)
1 cup chicken or vegetable stock
1 cup plain yogurt
1 tsp salt
1 tsp pepper
1/2 tsp dried garlic
1 spaghetti squash cooked and strands separated.
Brown turkey in a large saucepan. Add onion, pepper, and dried garlic. Cook until vegetables are soft. Mix yogurt and stock together and whisk until smooth. Pour over turkey mixture. Add salt and pepper. Stir to mix. Simmer over medium heat for 20 – 30 minutes to reduce the liquid. Remove from heat when you reach desired consistency.
Pour over spaghetti squash.
