Probiotic Avocado Mint Pudding (With a Chocolate Variation!)

Probiotic Avocado Mint Pudding – This creamy, no-cook pudding is packed with healthy fats, probiotics, and natural sweetness from honey. Made with ripe avocados, SCD 24-hour yogurt, and fresh mint, it’s a refreshing, gut-friendly treat. For a chocolate variation, simply add cocoa powder—mint is optional! Just blend, chill, and enjoy a smooth, mousse-like dessert without eggs, cornstarch, or refined sugar.

Ingredients

Avocado Mint Pudding (SCD-friendly)

  • 2 medium ripe avocados
  • 1 cup plain SCD yogurt
  • ¼ cup almond milk
  • 3 tbsp honey
  • 1 tsp vanilla
  • 1 tsp lemon juice
  • 2 tbsp chopped fresh mint

Avocado Chocolate Pudding (beyond SCD variation)

  • ¼ cup unsweetened cocoa powder or cacoa powder
  • 2 tbsp chopped fresh mint is optional in this version

Instructions

Avocado Mint Pudding

  1. Wash avocados, slice in half and remove the pits

  2. Add all ingredients to a high-speed blender or food processor

  3. Blend until smooth and creamy, scraping down the sides as needed

  4. If the pudding is too thick, add a splash more almond milk—but avoid making it too runny

  5. Transfer to an airtight container and refrigerate for at least 2 hours to allow flavors to develop and the texture to firm up

  6. Serve chilled and enjoy!

Avocado Chocolate Pudding

  1. Follow the same steps as the mint pudding, blending all ingredients together until smooth
