Slice dates on one side to remove the pit
Line ebaking sheet with parchment paper
Flatten dates, sliced side down on parchment paper
Line dates up andpress together to make a rectangle on the sheet
Add peanut butter, honey,and vanilla to small mixing bowl
Stir until well combined
Spread peanut mixture over dates
Sprinkle chopped dry roasted peanuts over peanut butter
Place in freezer while you prepare the cashew butter topping
Add cashew butter, softened coconut oil, honey, and vanilla to small mixing bowl
Stri until well combined and smooth
Pour cashew butter mixture over peanut butter layer
Top with shredded coconut if using
