SCD Recipe: Italian Stuffed Pepper Rings
This recipe is for 21 Day Sugar Detox, Paleo, and SCD.

bell peppers (any color)

grass-fed ground beef

tomato paste
(optional - you can sub some diced tomatoes)

ground coriander

chili powder
(optional)

black pepper

chopped basil

Sauce
-

cups
chopped tomatoes
I use Pomi, but you can use fresh

chopped basil

clove
garlic
minced

cup
carrots
choppped

tbsp
sea salt

tsp
fresh ground pepper
Sauce
-
Add all sauce ingredients to a medium pot
-
Bring to a simmer over medium heat
-
Cook for 30 minutes - reduce heat as needed to keep sauce from spashing

Remove from heat
-
Pour into a blender and puree until smooth
Filling
-
Combine all filling ingredients in a large bowl and combine well
Preparation of the rings

Line baking sheet or dish with parchment paper

Wash and slice peppers into half inch rings
-
Place rings on baking sheet
-
Spoon filling into rings so they are completely filled
-
Top with sauce (store left over sauce in refrigerator)

Bake for 40 - 45 minutes until meat is cooked through and peppers are soft
If you are not doing 21 Day Sugar Detox or Paleo, you can add some grated Parmesan to the top.
