
Preheat oven to 350℉
Add all crust ingredients to mixing bowl

Mix until just crumbly

Line 7" Springform form with parchment paper and lightly grease sides with coconut oil
Press mixture into bottom of pan

Bake for 15 - 20 minutes until golden

Whisk eggs in small bowl and set aside
Add yogurt to mixing bowl

Whisk until smooth

Add honey and vanilla

Whisk until smooth

Add lemon juice and whisked eggs

Whisk until smooth

Pour mixture into cooked crust

Bake for 45 - 50 minutes until just set

Chill in refrigerator for at least 4 hours or overnight
Carefully remove springform pan ring
Lift parchment paper to place on serving plate and carefully slide the parchment paper out
Top with fresh fruit if desired
