Heat the pan to medium heat and add the rest of the ingredients
Cook - stirring occasionally - until the apples are sauce and the liquid has thickened - about 10 minutes
Remove from heat
Crust
Combine all crust ingredients except coconut oil in a large bowl
Mix at medium speed for a minute or two until combined - It will form a crumbly dough that you can easily form into a ball - like a traditional pie crust
Cut in coconut oil - you can use the dough hook of a stand mixer or a pastry cutter
Forming the Dumplings
Preheat oven to 350 degrees
Line muffin pan with baking cups - 8 cups
Add about a tbsp of dough to each muffin cup and press into the bottom. Use you thumb to make an indentation
Spoon a tablespoon or so of apple filling into the muffin cups - evenly divide the filling over the bottom layer of dough
Cover the dumplings with the remaining crust dough - place on top and flatten out a bit
Bake for 18 - 20 minutes until crust is golden
Store in refrigerator - these are good warmed up
