SCD Bacon Cheeseburger Turkey Meatballs

All the flavor of a bacon cheeseburger rolled into one!

Servings 12 meatballs

Ingredients

  • 1 tbsp ghee (or other type of oil)
  • 1/2 cup onion chopped
  • 1 tsp garlic minced
  • 1 lb ground turkey (or other ground meat)
  • 1 large egg
  • 1/4 cup Parmesan cheese grated
  • 2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tbsp tomato paste (or sub homemade SCD ketchup
  • 1 tbsp mustard
  • 1/2 cup cheddar cheese chopped into small cubes
  • 4 slices uncured bacon cooked crisp and chopped

Instructions

  1. If bacon is not already cooked - cook it crisp and set aside to cool while you prepare the meatball mixture
  2. Heat ghee or oil in a frying pan and add the chopped onion and minced garlic
  3. Preheat oven to 400 degrees
  4. Cook onion and garlic until onion is soft and just starting to brown a little - 5 - 10 minutes
  5. Remove onions and garlic from heat and set aside
  6. Combine ground turkey, egg, Parmesan, tomato paste, mustard and spices in a large bowl
  7. Mix until well combined
  8. Stir in onions and garlic
  9. Stir in bacon
  10. Line a baking sheet with parchment paper (for easier cleanup)
  11. Form golf ball sized meatballs and line them up on the baking sheet
  12. Poke a couple cubes of cheese into each meatball
  13. Bake for 25 minutes or until meat is cooked through
  14. Serve as a lettuce wrap with fresh sliced tomatoes if desired

Recipe Notes

I made my meatballs a little bigger because I wanted to make a lettuce wrap. If you want more of an appetizer finger food you can make them smaller (use one cube of cheese per meatball) and bake for about 20 minutes.
