If bacon is not already cooked - cook it crisp and set aside to cool while you prepare the meatball mixture

Heat ghee or oil in a frying pan and add the chopped onion and minced garlic

Preheat oven to 400 degrees

Cook onion and garlic until onion is soft and just starting to brown a little - 5 - 10 minutes

Remove onions and garlic from heat and set aside

Combine ground turkey, egg, Parmesan, tomato paste, mustard and spices in a large bowl

Mix until well combined

Stir in onions and garlic

Stir in bacon

Line a baking sheet with parchment paper (for easier cleanup)

Form golf ball sized meatballs and line them up on the baking sheet

Poke a couple cubes of cheese into each meatball

Bake for 25 minutes or until meat is cooked through

Serve as a lettuce wrap with fresh sliced tomatoes if desired
