  1. Whisk together yogurt, lime juice, salt and pepper

  2. Add chicken to mixture so it is completely covered

  3. Marinate at least one hour

  4. Add two tablespoons of the ghee to a pan

  5. Add the garlic, red pepper flakes, coriander, and cumin

  6. Heat over medium heat until the ghee is melted and mixture starts to brown a little bit

  7. Melt the rest of the ghee into the mixture

  8. Add the chicken (brush off excess marinade) and cook for five to six minutes on each side

  9. Add one cup of water

  10. Simmer for 10 - 15 minutes until half of the liquid had reduced

  11. Serve over riced cauliflower, lentils, spaghetti squash or on its own
