Pecan Pie Pudding Cups - Dairy-Free

  1. Prepare sweetened condensed coconut milk according to recipe

  2. Set sweetened condensed coconut milk aside to cool

  3. Preheat oven to 350℉

  4. Add chopped pecans, honey, cinnamon, vanilla, and salt to medium mixing bowl

  5. Stir to combine

  6. Add eggs to mixing bowl and whisk

  7. While whisking eggs, slowly pour in cooled condensed coconut milk (it can be a little warm, but shouldn't be hot)

  8. Whisk egg mixture until smooth

  9. Stir egg mixture into pecan mixture

  10. Stir until thoroughly combined

  11. Place four ramekins in 9 x 13" baking dish

  12. Divide pudding mixture evenly amongst the four ramekins

  13. Place the half pecans in a pattern on top of the pudding

  14. Pour two cups of water in the bottom of the baking dish so the water comes up almost half way

  15. Bake for 45 - 50 minutes until pudding is set on top

  16. Cool ramekins on wire rack until room temperature

  17. Cover and chill in refrigerator for at least two hours before serving
