SCD Recipe: Grain-free Almond Flour Snickerdoodles

  1. Add almond flour, coconut flour, baking soda, salt, and 2 tsp cinnamon to mixing bowl

  2. Stir to combine and set aside

  3. Add softened butter, honey, and vanilla to large mixing bowl or stand mixer bowl

  4. Beat on medium speed until creamy

  5. Beat in eggs

  6. Beat until well combined

  7. Add in half of the flour mix

  8. Beat on low speed until combined

  9. Add the rest of the flour mixture

  10. Beat on low speed until combined

  11. Use a spatula to push the dough into a ball

  12. Place bowl with dough in freezer for 30 minutes

  13. Preheat oven to 350F°

  14. Line two baking sheets with parchment paper

  15. Remove dough from freezer

  16. Place 3 - 4 tsp cinnamon in a small bowl

  17. Form dough into one inch balls and roll lightly in cinnamon

  18. Place balls on baking sheet 2 inches a part

  19. Bake for 12 - 14 minutes until cookies are soft, but firm on top and could be picked up

  20. Cool on wire rack

  21. Store in refrigerator or freezer
