Easy Instant Pot Poached Chicken

Ingredients

  • 2 boneless, skinless chicken breast
  • 4 cups filtered water
  • 4 tbsp salt

Instructions

  1. Add chicken breasts to instant pot inner pot

  2. Cover with four cups filtered water

  3. Add four tablespoons salt

  4. Put lid on Instant Pot and make sure sealing ring is in place and vent is set to sealed for pressure cooking

  5. Set regular pressure cook setting and set to zero minutes

  6. One Instant Pot comes to pressure, let natural release for 10 - 15 minutes, then quick release to release the rest of the pressure

  7. Remove chicken from Instant Pot and let rest at least 10 minutes before slicing

  8. For most uniform slices, chill in refrigerator at least an hour before slicing
