This dough is versatile and can be used to make breadsticks, biscuits, and pie crust
Add almond flour, baking soda, lemon juice and salt to a medium mixing bowl
Stir together so everything is combined
Whisk yogurt until it is smooth
Add yogurt and cheese to a medium sauce pan
Heat over low heat until the cheese and yogurt are melted and you can combine them - you can also use a double broiler to do this, but I didn't hve any trouble using a sauce pan. Make sure you don't let the cheese start to brown in the bottom of the pan, it just needs to be soft and melted
Once the cheese and yogurt are melted together, add it to your dry mix
Use your hands to combine the dough so that it resembles pie dough
Preheat oven to 400F
Line a baking sheet with parchment paper
Break off pieces of the dough and roll them into either a breadstick shape or biscuit shape
Bake for 12 - 15 minutes until the bottom of the breadsticks are golden brown and they don't feel doughy when you press on them
Cool on wire rack for about 15 minutes
Roll the dough out between two sheets of parchemnt paper until it is thin
The dough won't really hold together to place into a large pie pan, but I was able to press it into ramekins to make a bottom and top crust.
Bake according to regular pie instructions. I made mini apple pies by cooking diced appes with honey and cinnamon until they were a little soft. I then baked them in the crust at 400F for 30 - 25 minutes
