Separate eggs and add egg whites to large mixing bowl. Reserve yolks for later
Beat egg whites at high speed until stiff peaks form
Set egg whites aside
Add almond flour, salt, cinnamon, and baking soda to a large mixing bowl and mix until combined
Add egg yolks, lemon juice, vanilla, honey, melted butter, and coconut milk and mix at medium speed until wet and dry ingredients are well combined
Gently fold in egg whites until everything is just mixed, but batter is still fluffy
Prepare waffles according to waffle-maker manufacturer instructions. The batter will be thick so you may need to spread it out a little bit
Variation: for "chocolate" waffles substitute melted cocoa butter for the regular butter.
