Strawberry Bananacake Stack

  • 2 small ripe bananas
  • 1 large egg
  • 1/2 tsp honey
  • 1/2 tsp lemon juice
  • 1/4 tsp baking soda
  • 6 medium strawberries
  • 1/2 cup SCD yogurt
  • 1/2 tsp honey or to taste
  • 1/4 tsp vanilla optional
  • 1 tbsp butter or cononut oil for frying


  1. Blend bananas, egg, honey, lemon juice, baking soda until smooth

  2. Heat butter (or coconut oil) in a frying pan over medium-low heat

  3. When  butter is melted pour batter into pan to make three small pancakes 

  4. Cook for 2- 3 minutes until you start to see bubbles form on top and the edges thicken - be careful these burn easily, which is wny the heat is lower than usual for pancakes

  5. Flip pancake and cook for 2 - 3 minutes until pancake is cooked through

  6. Remove pancakes to plate

  7. Melt the rest ofthe butter in the pan and repeat steps

  8. Whisk yogurt with honey and vanilla until smooth

  9. Slice strawberries

  10. Stack cakes, strawberries, and yogurt
