Grilled Cheese on Cauliflower Bread

Ingredients

  • 1 bag cauliflower crumbles cooked
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1 tsp minced garlic
  • 1/2 tsp sea salt
  • 1/4 tsp pepper

Cheese Sandwich

  • 2 squares cauliflower bread
  • 2 - 3 slices cheese to cover square
  • 1/2 tbsp butter

Instructions

  1. Heat oven to 450 degrees

  2. Squeeze water out of cauliflower until it seems pretty dry. I like to use a nut milk bag. 

  3. Place cauliflower, egg, cheese, and spices in a bowl

  4. Mix thoroughly

  5. Line baking sheet, or 9 x 13"cake pan, with parchment paper.

  6. Press cauliflower mixture into a rectangular shape that is about a 1/4 inch thick.

  7. Bake for 15 - 20 minutes until cauliflower looks golden brown

  8. Allow to cook for 10 - 15 minutes

  9. Cut into six squares

For sandwich

  1. Melt butter in frying pan over medium heat

  2. Add two squares of cauliflower bread to pan

  3. Toast for 1 1/2 - 2 minutes on each side

  4. Add cheese to one side and cover with the other

  5. Reduce heat a little so bread doesn't burn while cheese is melting

  6. Toast on each side for a few minutes until cheese is melted
