SCD Recipe: Bacon Cheeseburger Stuffed Peppers

For these stuffed peppers I was going for a kind of “Impossible Cheeseburger Pie” (if you ever had that, it was a staple of ours when I was growing up) taste and texture – in a pepper.

These would be good with some homemade ketchup, but I forgot about making that ahead of time!


Ingredients:

4 bell peppers (red, green, yellow, orange – your choice)

Meat Filling:

1 tbsp olive oil
4 slices chopped bacon
1 lb ground turkey or beef
1 cup chopped onion
1 clove minced garlic
1 tsp salt
1 tsp pepper
1/4 tsp turmeric
1 cup fresh baby spinach

Dough Filling:

1 1/4 cups almond flour
1/4 tsp salt
1/4 tsp baking soda
2 tbsp melted butter
1 egg

The Rest of the Filling:

1 cup fresh grated Parmesan cheese
4 slices sharp cheddar cheese

Preparation:

  1. Preheat oven to 350 degrees
  2. Heat large pan over medium heat
  3. Cook bacon until just crispy
  4. Remove bacon to paper towel covered plate
  5. Drain bacon grease (or you can use it in place of the olive oil if you like that)
  6. Add olive oil
  7. Saute onion and garlic in olive oil until the onions are translucent
  8. Add the ground turkey or beef
  9. Brown meat until cooked through
  10. Turn off heat
  11. Add spinach and stir until spinach is cooked
  12. Stir in cooked bacon
  13. Remove pan from heat
  14. Combine all dough ingredients in a medium bowl
  15. Stir until mixed thoroughly
  16. Stir dough into meat mixture
  17. Make sure this is well combined or you will get pockets of dough in the pepper
  18. Stir in Parmesan
  19. Wash peppers, cut tops off peppers and remove seeds and white ribs
  20. Place peppers in a baking dish
  21. Scoop filling into the peppers so they are stuffed full
  22. Bake peppers for 30 minutes
  23. Place cheddar cheese slices over each pepper and bake for another 15 minutes
