SCD Recipe: Grilled Cherry Vanilla Pound Cake

This is a great summer dessert. You don’t have to grill it, but it gives it that extra something if you do!

Ingredients:

2 cups almond flour
1/2 tsp baking soda
1/4 tsp salt
2 tbsp melted butter
1/4 cup honey
1 tbsp pure vanilla extract
3 eggs
1 cup frozen cherries that have been thawed
additional butter for grilling
Fresh berries (optional)
Plain yogurt (optional)


Preparation:

  1. Preheat oven to 350 degrees
  2. Line the bottom of a 9″ loaf pan with parchment paper and lightly oil the sides
  3. Combine almond flour, baking soda and salt in a large bowl
  4. In another bowl add the butter, honey, vanilla, and eggs
  5. Mix until smooth
  6. Pour wet mixture into almond flour mixture
  7. Stir until well combined
  8. Place cherries into a blender or bowl (if using a hand blender)
  9. Take a half cup of the batter and pour it over the cherries
  10. Blend until smooth
  11. Pour plain batter into the loaf pan
  12. Pour the cherry mixture on top
  13. Bake for an hour to an hour and fifteen minutes until cake is firm (cake will be very moist on top, but should appear cooked. Don’t worry if the the top part darkens a little, just don’t let it burn)
  14. Cool cake completely before removing from pan
  15. Store cake in refrigerator
To Grill:

I grilled mine in a stove top cast iron grill pan. If you want to try to do it on a regular grill, you will probably want to freeze the cake before so it is very solid going on the grill. If doing it on the stove you can freeze it for about 30 minutes before, or just refrigerate for a few hours before (this is what I did).
  1. Heat grill pan on medium-low heat 
  2. Butter both sides of the cake – fairly generously – you don’t want the cake to stick to the pan
  3. Grill for 2 to 3 minutes per side
  4. If desired garnish with fresh berries and yogurt
